Marinated whole Pomfret fish, pan fried and simmered in coconut milk. An easy and delicious recipe from Chef Soju Philip.
Clean, wash and make gashes on pomfret fish. Marinate with turmeric powder, Kashmiri chilli powder, black pepper powder, salt, ginger garlic paste, coconut oil and lemon juice. Keep rested for 30 min in refrigerator.
Heat a frying pan, pour some coconut oil which is enough to shallow fry the fish. Place a sprig of curry leaf in oil, and place the marinated fish over it and pan fry both side till it brown in color and done. Remove the fish and keep aside.
Heat a frying pan, place the fried fish in that and pour half cup coconut thin milk, green chilli, tomato slices and lemon juice,simmer gently.
Add 1/4 cup thick coconut milk, heat gently and remove from fire.
serve hot with choice of breads or rice.
